My Banana Bread recipe

In my previous blog post I mentioned how much I love snacking and honestly this banana bread works out to be one of my favourite snacks. I personally make this as individual muffins so I can individually freeze them and just microwave them whenever I want one.


  • 1.5 cups of plain flour
  •  2 medium ripe bananas- mashed
  •  180g of Greek yogurt
  •  2 eggs
  •  1/2 cup of honey
  •  1 tablespoon of coconut oil- melted
  •  1/2 teaspoon of bicarbonate of soda
  •  1 teaspoon of baking soda
  •  Cinnamon to taste
  •  Chocolate chips if desired                                                                                                                                                           

1- Oven should be preheated to 175°c                                             

2-Mix together all the dry ingredients in a bowl. In a separate bowl mix together all the wet ingredients with the banana.      

3- Add the wet ingredients to the dry and stir until they’re all combined.

4- Pour into either a silicone loaf tray or muffin cases.

5- Pop into the oven and bake for 45 minutes until brown on top. Either leave to cool or eat fresh  and warm from the oven.

This really is such a simple recipe to make and can be altered with many different flavour combinations. Some of my favourites are peanut butter or chocolate chips but nuts and dried fruit can be added if preferred.

This recipe lasts for about a week before it begins to go stale, however in my house they are never left that long. As the mornings get colder they are perfect after 20 seconds in the microwave with a nice cup of tea!
